Mother’s Day is quickly approaching, and we can’t wait to celebrate the mother figures in our lives. What better way to spoil them than with a beautiful brunch? We’ve put together a handful of recipes that you can easily whip up to give mom some extra love and appreciation. Make one recipe to treat the mother figure in your life to a cozy breakfast in bed, or make them all for the ultimate Mother’s Day brunch. If you want to go the extra mile, pair these brunch recipes with homemade cards and flowers to make the day extra special.

Strawberry Pancakes


Ingredients:

  • 1 cup Partake Classic Pancake & Waffle Mix
  • ⅔ cup water
  • 1 cup sliced strawberries

Directions:

  1. Mix together Partake mix and water. 
  2. Cook over medium high heat on a preheated, greased skillet. Flip once, and serve when golden brown.
  3. Top with sliced strawberries, syrup and whipped cream if desired.
  4. Enjoy!


Peach Aebleskivers


Ingredients:

  • 1 cup Partake Classic Pancake & Waffle Mix
  • ⅔ cup water
  • 1 cup sliced peaches
  • Powdered sugar for dusting
  • Whipped cream 
  • Syrup (optional)

Equipment: Aebleskiver pan 


Directions:

  1. Mix together Partake mix and water. 
  2. Heat aebleskiver pan over medium high heat and grease generously with oil. 
  3. Drop 1 tbsp of your batter into each cup. Cook until the top is bubbly, then flip with a skewer or chopstick. Cook until golden brown.
  4. Dust aebleskivers lightly with powdered sugar and top with sliced peaches and whipped cream. Drizzle with syrup if desired.
  5. Enjoy!

Avocado “Toast” Flatbread

Ingredients:*

For the flatbread

  • 1 package Partake Pizza Crust Baking Mix
  • 1 cup water
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 ½ tbsp active dry yeast (optional)
  • ½ tsp onion powder (optional)
  • ½ tsp garlic powder (optional)

For the toppings

  • 2 medium sized avocados
  • Pickled onions 
  • Bell peppers
  • Red chili flakes
  • Green onions
  • Minced garlic
  • Spinach 

*Make adjustments based on your dietary restrictions and preferences and as needed.

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. In a bowl, dissolve yeast (if using) in warm water. Let stand until foamy, about 5 minutes.
  3. Stir in mix, olive oil, apple cider vinegar, garlic powder (if using), and onion powder (if using) and form into a tight ball. Allow to sit for 10 minutes.
  4. Roll dough out onto a flat surface, pressing out with oiled hands if sticking, and allow it to sit for 10 more minutes. 
  5. Bake flatbread for 18-22 minutes.
  6. Allow flatbread to cool for 5-10 minutes.
  7. Place greens and avocado slices on flatbread, then top with your desired toppings.
  8. Enjoy!

 

Chocolate Covered Strawberry Brownies

Ingredients:

For the brownie layer

  • 1 package Partake Brownie Baking Mix
  • ½ cup water
  • ½ cup neutral tasting oil

For the chocolate covered strawberry layer

  • 2 cups fresh strawberries, stems removed and halved
  • 2 cups semi-sweet chocolate chips
  • 1 cup heavy whipping cream

Directions:

For the brownie layer

  1. Preheat the oven to 350 degrees F. Grease an 8” square pan.
  2. Mix Partake mix, water, and oil until combined. 
  3. Spread batter evenly in a greased pan. Bake for 25-30 minutes, until set.
  4. Let brownies cool completely.

For the chocolate covered strawberry layer

  1. Microwave heavy whipping cream for 1-2 minutes until steaming.
  2. Place chocolate chips into a microwave safe bowl. Pour cream over chocolate chips and cover the top of the bowl to trap the heat. Let sit for 3-4 minutes.
  3. Whisk chocolate and cream until well combined.
  4. Arrange strawberry halves on top of cooled brownies.
  5. Pour chocolate and heavy whipping cream mixture into an even layer on top of the  strawberries and brownies. 
  6. Refrigerate for 15-30 minutes until set.
  7. Enjoy!

 

Lemon French 75 (for those 21+)

Ingredients:

  • 1 ½ oz gin
  • ¾ oz fresh lemon juice
  • ¾ oz simple syrup
  • 2-3 oz chilled champagne
  • Lemon peel, for garnish

Directions:

  1. Fill a cocktail shaker with ice and pour in the gin, lemon juice, and simple syrup. Shake until well chilled.
  2. Pour the liquid into champagne glasses and top off with champagne.
  3. Garnish your glass with lemon twists and enjoy!
