No Bake Strawberry Icebox Pie

Memorial Day is the unofficial start to summer. It’s a day for potato salad, hot dogs, and that one dessert everyone crowds around. This year, we want that dessert to be yours, and we want as many people as possible able to eat it.
This No-Bake Strawberry Icebox Pie checks every box: no oven, no stress, free of the top 9 allergens, and absolutely no one will believe it took less than 30 minutes to make. The crust is made with our Classic Grahams, crushed and pressed into a pie dish the way grandma would do it, except this version is free from the top 9 allergens, certified gluten-free, and completely vegan. The filling is whipped coconut cream. The topping is fresh strawberries tossed with jam and a little lemon juice.

A Few Notes Before You Start
Chill your coconut cream the night before. This is the one non-negotiable step. Full-fat coconut cream needs to be cold overnight for the fat to separate and whip properly. Shake-warm-from-the-can coconut cream will not whip into anything useful, so plan ahead.
Freeze the crust and filling before you add the topping. The short freezes between layers keep everything from sliding around when you slice it. The final chill in the refrigerator (2 hours minimum, overnight is better) is what turns this from assembled ingredients into an actual pie.
Add blueberries if you want the full “red, white, and blue” moment. Toss them in with the strawberries at the end. It looks great and it tastes exactly as good as it sounds.
Ingredients
Crust
- 1.5 cups Partake Classic Grahams, crushed
- 5 tbsp coconut oil, melted (or vegan butter)
- 2 tbsp maple syrup
- Pinch of salt
Filling
- 2 cups full-fat coconut cream, chilled overnight
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
Topping
- 2 cups fresh strawberries, sliced
- 3 tbsp strawberry jam
- 1 tbsp lemon juice
Instructions
Step 1: Make the crust. Crush the Classic Grahams, or pulse in a food processor, until you have fine crumbs. A zip-lock bag and a rolling pin works great. A food processor works faster. Mix the crumbs with melted coconut oil, maple syrup, and salt until the texture looks like wet sand. Press the mixture evenly into a 9-inch pie dish, going up the sides a little. Freeze for 20 minutes.
Step 2: Whip the filling. Open your chilled coconut cream and scoop out the thick white cream that has risen to the top (leave the liquid at the bottom for smoothies). Beat with a hand mixer or stand mixer on medium-high until it forms soft peaks, about 3 to 4 minutes. Add powdered sugar and vanilla, and beat for another minute until fluffy and smooth.
Step 3: Fill and freeze. Spread the whipped coconut cream evenly into the chilled crust. Smooth the top with a spatula. Freeze for 15 minutes.
Step 4: Make the topping. Toss sliced strawberries with strawberry jam and lemon juice. The jam adds gloss and body, and the lemon keeps everything bright. If you're adding blueberries, toss them in here too.
Step 5: Top and chill. Layer the strawberry mixture evenly over the filling. Refrigerate for at least 2 hours, or overnight if you're making this ahead (which we strongly recommend). Slice cold and serve cold.
