Confetti Cookie Bark takes a pack of our Mini Confetti Crunchy Cookies, lays them into a sheet of melted white chocolate, and finishes the whole thing with a generous shower of rainbow sprinkles. Pop it in the freezer, snap it into pieces, and you have a colorful treat that looks like you fussed even though you really didn't.

It is the kind of recipe a kid can run start to finish (Vivi did), which makes it perfect for rainy afternoons, birthday tables, or anytime a snack pack deserves a glow-up. Best part: like everything from Partake, it's allergy-friendly!

What You'll Need

Four simple things. That's the whole list.

  • 1½ cupsdairy-free white chocolate baking chips 
  • 1 tspcoconut oil optional, for an extra-smooth melt
  • 1 packPartake Mini Confetti Crunchy Cookies
  • 2–3 tbsprainbow sprinkles (look for an allergy-friendly brand)
Good to know: White chips melt fast and can seize if they overheat. A teaspoon of coconut oil keeps things glossy and pourable, especially if your kitchen runs cool.

Make the Bark

Five steps, mostly hands-off.

  1. Melt the white chocolate

    Add the white chips (and coconut oil, if using) to a microwave-safe bowl. Heat in short bursts, stirring between each, until smooth. Vivi's took about 49 seconds total.

    Stir often so it doesn't burn.
  2. Pour and spread

    Tip the melted chocolate onto a parchment-lined baking sheet. Spread it into an even layer, roughly ¼-inch thick, smoothing the top with the back of a spoon.

  3. Add the cookies

    While the chocolate is still wet, press the Partake Mini Confetti cookies across the surface, spacing them so every piece you break later gets a cookie. (Crumble them if you want smaller cookie pieces.)

  4. Shower with sprinkles

    Scatter rainbow sprinkles generously over the whole sheet. This is the confetti, so don't be shy.

  5. Chill, then snap

    Slide the sheet into the freezer for 15 minutes, until firm and set. Lift the bark off the parchment and break it into pieces with your hands.

Once it's firm, the whole sheet snaps into colorful, cookie-studded shards.
