Needed ingredients for the cake:
- 2 1/2 cups Classic Pancake & Waffle Mix
- 3/4 cup sugar
- 1 tbsp vanilla extract
- 3/4 cup water
- 1/2 cup vegan butter, room temperature
Needed ingredients for the filling:
- 1 can cherry pie filling
- 2 tbsp of lemon juice
Needed ingredients for the topping:
- 1/2 cup Partake Classic Pancake & Waffle Mix
- Soft Baked Lemon cookies crumbles
- 1/4 cup cane sugar
- 1/4 cup light brown sugar
- 3 tbsp oil or vegan butter, melted
- Preheat the oven to 350 F.
- Line a small square dish with parchment paper and spray with non-stick spray. Set aside.
- Make the filling by combining the cherry pie filling and lemon juice. Set aside.
- Make the topping by first combining all dry ingredients. Add oil/melted butter, stirring together completely. Set aside.
- Lastly, make the cake. Combine vegan butter and sugar and mix until the batter lightens a bit. Add vanilla extract.
- Add water to the cake mixture. It may not blend together completely (That’s okay!).
- Add Classic Pancake & Waffle Mix to the cake mixture and stir until everything is mixed well.
- Spread half of the cake batter into the pan evenly.
- Sprinkle filling to cover all of the pan—use it all.
- Spread the second half of the cake batter over the filling so it covers the top completely. Spread it evenly.
- Sprinkle topping over the top to cover.
- Bake for 45-60 minutes or until a toothpick inserted into the middle comes out clean.
- Add lemon zest for garnish (optional).
