Cookies & Cream Brownies


Ingredients:

  • 1 package Partake Brownie Mix
  • 1/2 cup oil
  • 1/2 cup water
  • 1 box of your favorite Partake crunchy cookies, crushed
  • 8 ounce allergy friendly cream cheese
  • 2 tbsp vanilla extract
  • 5 tbsp powdered sugar

Instructions:

  1. Preheat the oven to 350°F.
  2. In a bowl, combine brownie mix, oil and water.
  3. Spread into a greased 8x8 pan. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  4. Remove from the oven and allow to cool before topping with frosting.
  5. For the cream cheese frosting, use an electric hand mixer to combine the cream cheese, powdered sugar, and vanilla extract until smooth.

Assembly 

  1. Spread or pipe cream cheese frosting over the top of the brownies.
  2. Top with crushed, crunchy cookies.
  3. Cut and serve.
  4. Enjoy!


Pumpkin Spice Brownies


Ingredients:


  • 1 package Partake Brownie Mix
  • ½ cup water
  • ½ cup neutral-tasting oil
  • ½ cup crumbled Partake Soft Baked Pumpkin Spice cookies
  • 2 tbsp of Pumpkin Spice powder or 1 tbsp of Pumpkin Puree 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Grease an 8-inch square pan.
  3. Whisk together the oil and water before adding the brownie mix.
  4. Add your choice of Pumpkin Spice powder or Pumpkin Puree to the batter, then add in crumbled Pumpkin Spice cookies and spread batter evenly in greased pan.
  5. Bake until set, 25-30 minutes in a metal pan and 35 minutes in a glass pan. A toothpick inserted into the center should come out clean.
  6. Let Brownies cool slightly (8-10 minutes) before diving in.
  7. Enjoy!

Jam Swirled Cheesecake Brownies


Ingredients:


For the brownie layer

  • Partake Brownie Baking Mix
  • ½ cup water
  • ½ cup neutral tasting oil

 

For the cheesecake layer

  • 16 oz vegan cream cheese at room temperature
  • 14 tbsp coconut cream – scoop only the cream from a can of coconut milk (do not shake can)
  • ½ cup + 3 tbsp granulated sugar
  • 2 tsp vanilla extract
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • Small pinch of salt
  • 3 tbsp Plum & Rose Trade Street Jam (or your preferred flavor)

 

Directions:

  1. Preheat oven to 350 degrees F. Line an 8” pan with parchment paper.
  2. In a medium bowl, mix together the brownie layer ingredients until well combined. Set aside.
  3. In another medium bowl, mix together all cheesecake layer ingredients (except for the jam) until well combined.
  4. Pour your brownie batter into an even layer in the prepared pan. Then, pour your cheesecake mixture on top. Smooth into an even layer with spatula if needed.
  5. Dollop your jam on top of the cheesecake layer, then use a toothpick to create swirls.
  6. Bake for 25-30 minutes. Note: center will not be completely set when done. Allow pan to cool to room temperature, approximately an hour, before transferring to your refrigerator to set. They will need at least 4 hours to set, longer or overnight is preferred.
  7. Enjoy!


Salted Caramel Brownies


Ingredients:


For the Salted Caramel:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, room temp, cut into tablespoons
  • 1/2 cup heavy cream, room temp
  • 1 to 1 1/2 tsp sea salt

For the brownies:

  • 1 package of Partake Brownie Mix
  • 1/2 cup water
  • 1/2 cup neutral-tasting oil

Instructions:


Salted Caramel: 

  1. In a metal saucepan, heat the sugar on medium to high for 3- 5 minutes. Make sure to use a spatula to occasionally stir the sugar, getting to the bottom of the pan. 
  2. Once it becomes a dark amber hue, remove it from heat immediately and stir in butter.
  3. Pour in the heavy cream and sea salt and stir until everything is combined. 
  4. Place back on the stove, stirring the whole time then remove from heat after 30 seconds and allow salted caramel to cool for 15 minutes.

Brownies: 

  1. Preheat oven to 350 degrees.
  2. Grease an 8-inch square pan.
  3. Whisk together the oil and water before adding the brownie mix.
  4. Spread batter evenly in greased pan.
  5. Bake until set, 25-30 minutes in a metal pan and 35 minutes in a glass pan. A toothpick inserted into the center should come out clean.
  6. Let Brownies cool slightly (8-10 minutes) before drizzling the salted caramel over the top and finishing off with some sea salt.
  7. Enjoy!

Raspberry Chocolate Brownies


Ingredients:

  • 1 package Partake Brownie Mix
  • ½ cup water
  • ½ cup neutral-tasting oil
  • ½ cup of muddled raspberries 
  • ½ cup of whole raspberries 

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease an 8-inch square pan.
  3. Whisk together the oil and water before adding the brownie mix.
  4. Add muddled raspberries to the batter and then spread batter evenly in greased pan.
  5. After brownie batter has been spread evenly in the pan, top with whole raspberries for a pop of color.
  6. Bake until set, 25-30 minutes in a metal pan and 35 minutes in a glass pan. A toothpick inserted into the center should come out clean.
  7. Let Brownies cool slightly (8-10 minutes) before diving in.
  8. Enjoy!

Brownie Ice Cream Sandwiches


Ingredients:


For the brownies:

  • 1 box Partake Brownie Baking Mix
  • 1/2 cup neutral tasting oil
  • 1/2 cup water

 For assembly:

  • 1 pint of your favorite ice cream or dairy-free frozen dessert

 

Directions:

  • Preheat oven to 350 degrees F.
  • Grease an 8x8 pan.
  • Whisk together the oil and water.
  • Add Partake mix and stir until well combined.
  • Spread batter evenly in prepared pan.
  • Bake for 25-30 minutes or until set (35 minutes if using a glass pan).
  • Let brownies cool completely (at least 30 minutes).
  • Cut brownies into an even number of squares. Or use a square cookie cutter for even slicing.
  • To assemble, place a scoop of ice cream onto 1 brownie square and top it with another brownie square. Quick tip: If you have some time, let your ice cream sit on the counter for 10-15 minutes (or until soft and slightly melty). Line your completely cooled brownie pan (or a glass pyrex dish) with parchment paper making sure the parchment sits over the edges, enough to grab, and then spread softened ice cream in the dish. Place the pan in the freezer overnight. The next day, remove the pan from the freezer, grab parchment edges to lift the ice cream out of the dish and cut it into even squares using your knife or square cookie cutter. 
  • Assemble into brownie sandwiches and Enjoy!
