Crisp vs. Cobbler vs. Crumble
What exactly is a crisp? There are many different desserts in this same family, but little nuances ultimately make the distinctions between them all. Although often interchanged with a cobbler, these two desserts are not to be mistaken for each other. A cobbler is a fruit dessert with a top crust of pie dough, or even biscuit dough, with no bottom crust. A crisp, however, is a fruit dessert baked with a streusel-like topping that has old-fashioned rolled oats and no bottom crust. It is closer to a crumble, which has a similar topping usually made with butter, flour, and sugar, but does not have the oats. Lemon Peach Crisp with Soft Baked Lemon Cookies
Ingredients
For the base:
- 1-2 pounds of peaches (halved and then sliced)
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- 3/4 cup of sugar
- 1 tablespoon of cornstarch
- 1/2 teaspoon of cinnamon
For the topping:
- 2/3 cup of flour (your preferred gluten-free, nut-free flour)
- 2/3 cup of gluten-free oats
- 1/2 cup of brown sugar
- 1 teaspoon of cinnamon
- 1/4 teaspoon of salt
- 6 tablespoons of vegan butter
- Crumbles of Soft Baked Lemon cookies
Instructions
- Mix all the base ingredients together in a medium-sized bowl and pour into an oven-safe dish.
- Mix all the topping ingredients together in a separate bowl and layer it on top of the mixed base ingredients.
- Bake the dish for 30-35 minutes at 375 degrees or until golden brown and top is set.
- Top with vegan ice cream (optional). Enjoy!
